Banana and Date Smoothie

One night, when home alone (Jóhannes was on a business trip in Portugal) I looked into my fridge and there was nothing in it apart from soy yoghurt and nail polish. I knew I had some overripe bananas lying around as well so that only meant one thing, banana smoothie (without the nail polish obviously)! I decided to add some dates as well to make it extra filling since I wasn't bothered to cook a dinner just for myself. The smoothie was wonderful and ever since this night I often make it for my family.
You will need a food processor or a blender to make this smoothie.

Smoothie packed with fibre, protein and potassium
This recipe is:
- Egg free
- Gluten free
- Lactose (dairy) free
- Nut free
- Vegan
Banana and Date Smoothie
Serves 2 people
Ingredients
- 350 millilitres (11½ fluid oz) soy yoghurt (you can also use regular yoghurt)
- 10 dates, chopped coarsely
- 2 large bananas, very ripe
- 1 teaspoon vanilla extract (from a health food store)
Preparation
- Chop the 10 dates and place them in a small bowl and cover with warm water for 20 minutes.
- Drain the dates and place in a blender or food processor.
- Add the 2 bananas, 1 teaspoon vanilla extract and 350 millilitres soy yoghurt.
- Blend for 15 seconds or until completely smooth.
- Serve immediately.
Tips
- For a thinner smoothie add a little soy milk (or any other milk you prefer).
- You can use maple syrup instead of the agave nectar.
