Albert's Carrot Cake

There is a volcanic eruption in Iceland at the moment. We are in living in London although our thoughts are with everyone back home It's the second time we have observed a big eruption from afar (within the space of one year) and it feels weird. We have been in contact with our family today just to get the low down on the situation. Everyone is fine (the eruption is not very close to dense population) although as luck would have it my brother has a farm (The Hrífunes bed and breakfast) right in the middle of Grímsvötn (the one that is erupting now) and the famous Eyjafjallajökull that caused such a chaos last year. So his farmhouse has had to withstand two eruptions (one from each end) in one year! Everything is covered in ash and the farmers have had to gather their livestock as the little lambs, calves and foals won't be able to survive otherwise. My mother in law has horses and newborn foals a bit further away and she will house them if needs be.

But enough about volcanoes....

Regularly I get sent recipes from users (my friend Lísa doesn't count because she sends me delicious recipes all the time and I have about 200 recipes of hers I need to make in the very near future). I love reading recipes from other people and I particularly like reading all those „family recipes” that often have been handed down generation from generation. Sometimes people send me recipes that are particularly dear to them due to a special event or an occasion and I love the generosity of users that are willing to send me these treasures. Unfortunately I don‘t have time to try out all recipes I get sent although sometimes I just can‘t help myself and this recipe from Albert Eiríksson was one of them. The recipe was just too darn enticing and I was happy I decided to try it out because the cake was amazing.
