Carrot and Fruit Juice

This is more like a smoothie or a thick juice since the pear and nectarine are blended in a food processor or blender. You can also juice the fruits if you prefer a thinner juice. I actually like the thick texture of this drink and it provides plenty of fibre and vitamins. You can also add half a banana if you like. This is a refreshing and simple drink which I often make. If you don't own a juicer you can buy carrot juice from a health food store. Make sure you buy organic fruits if you are leaving the skin on.

Carrot and Fruit Juice
Serves 2 people
Ingredients
- 200 millilitres (7 fluid oz) chilled carrot juice (you can also juice your own)
- 1 nectarine, very ripe
- 1 pear, very ripe
Preparation
- Peel the nectarine and the pear if you prefer. You can also leave the skin on.
- Discard the stone from the nectarine and remove the seeds and the stem from the pear. Chop coarsely.
- Place the pear and the nectarine in a food processor or blender along with the 50 millilitres (1½ fluid oz) carrot juice.
- Blend for 10 seconds.
- Add the remaining 150 millilitres carrot juice and continue blending for 15 seconds or until smooth.
- Serve immediately.
- Serve with ice cubes if preferred.
Tips
- You can use apple juice, pear juice or pineapple juice.
- You can add half a banana for a thicker juice.
- If the juice is not sweet enough, you can add 1 tablespoon agave nectar.
- You can juice your own carrots if you prefer.
