Cookies
Cookies can be tricky little buggers because to make crunchy cookies you need lots of fat. I don't like lots of fat in my baking but I don't like too soft cookies either. So what to do? I use as much as necessary without using a teaspoon more. So for example usually a cookie recipe calls for around 100-200 grams of butter but I might use 5 tablespoons of coconut oil and then use some tahini (sesame butter), cashew butter or almond butter. I even use peanut butter in some instances. The cookies are fairly light (considering that they don't contain any butter) and yet crunchy. Well most of them are. The cookies are the only recipes that contain more than 2 tablespoons of coconut oil but Christmas comes only once a year right?
Almond Cookies with Chocolate Frosting
Almonds are packed with calcium and protein and macadamia nuts also contain healthy stuff, notably the mono-unsaturated fats which are good for our heart.
