Noodle Soups
When freezing noodle soups it's always best to freeze the soup base without the noodles and then add them fresh when reheated. When frozen and reheated the noodles tend to become soggy and uninteresting (believe me I know from experience). Apart from that, noodle soups are the best invention since sliced bread. Whoever came up with the idea of adding noodles to his soup must have been a genius. I used to buy noodle soups in a cup (just adding water) for many years when younger and in school. I was so skint (not poor, there is a big difference) and this was the only thing that I could comfortably afford and the only thing that made me feel like I was having a hot meal. I thought to myself, 'better eating noodle soups in a cup than taking any student loans right?'. Well my health suffered, my skin was dry, my nose was constantly runny and I had stomach cramps all the time. I know now that these soups are full of additives, trans fats, MSG (Monosodium Glutamate) and other rubbish. The guy that invented the noodle soups in a cup may also have been a genius but they might seriously have affected the diet (and health) of so many students. If only I had known then how easy it is to make your own soup with noodles in!
Coconut and Salmon Noodle Soup
This soup is the perfect one to make if you have a bit of leftover salmon in the freezer or fridge.
Hot and Sour Mushroom Broth
This recipe is an adaptation of a similar recipe I found in a book called Veggie Chic by the great author Rose Elliot.
Mussels and Coconut Noodle Soup
This is one of those recipes which has an endless ingredients list.
Simple Trail Noodle Soup
I know it is probably much quicker buying ready made trail food but let me tell you...most of what is sold out there is rubbish.
Thai Laksa
I know that the recipe seems very, very complicated.
Thai Noodle Soup with Shrimp
This soup is so good and it is fairly quick if you can get your hands on some decent Thai green curry paste. The ones that are sold in health food stores are usually quite nice.
Wild Mushrooms and Noodles Trail Soup
Me and my husband are keen hikers. We love nothing more than packing our bags on a Friday evening, heading into the Icelandic wilderness.
