Pasta / Noodles
My father refuses to eat pasta, spaghetti or anything Italian for that matter (e.g. pizzas, lasagna). He says it's not food and says that Italian men have never had to work outside in the cold and he states that this is the reason they eat "normal" food. He is not the only one of his generation that has this opinion. My late father in law used to agree. My father is used to working outside in all weathers (blizzards, crazy snowstorms, rain, hail and what not). He is the guy you would spot from a million miles working on a rooftop because he is the only one not wearing a jacket in a blizzard. He says that pasta doesn't keep him warm (he insists that sheep intestines and singed sheep heads do however). I however work in front of a computer all day and I if I get cold I wrap up and drink a hot mug of tea or soup. If I ate the kind of food he does and still sat on my behind, I would look like a balloon. He must work off around 4000 calories each day during the winter time so it makes sense that he doesn't like something as light as pasta.
Cashew Chicken with Vegetables and Noodles (and a Dressing)
Oh boy does my husband get happy when I serve this dish. He always asks me to make a monster sized dinner so that he will be able to take leftovers to work the next day.
Chicken Chow Mein
The main ingredients of Chow Mein are meat, noodles, vegetables and onions but very varied between countries and continents.
Chinese Five Spice Vegetable Noodles
'Five Spice' is a seasoning regularly used in Chinese food. It should be available in most supermarkets (and some health food stores), just ensure it contains only spices, not additives.
Coconut and Salmon Noodle Soup
This soup is the perfect one to make if you have a bit of leftover salmon in the freezer or fridge.
Hot and Sour Mushroom Broth
This recipe is an adaptation of a similar recipe I found in a book called Veggie Chic by the great author Rose Elliot.
Mussels and Coconut Noodle Soup
This is one of those recipes which has an endless ingredients list.
Oven Baked Vegetables with Pasta
A very simple and cheap dish, perfect for the mid week headache of "what should I have for dinner?".

This is a very healthy version of Pad Thai noodles and I often use both tofu and vegetables only in this recipe and it still tastes grate.
Pasta with Smoked Salmon or Trout
My family has access to a lake in the Icelandic wilderness. It is only accessible by 4x4 and then by foot. This lake is surrounded by mountains.
Sesame Noodles
I really like this recipe. It has few and simple ingredients that work extremely well together. Just make sure you buy organic peanut butter without any additives or sugar.
Simple Trail Noodle Soup
I know it is probably much quicker buying ready made trail food but let me tell you...most of what is sold out there is rubbish.
Soba Noodle Salad with Wakame, Ginger and Vegetables
I made this salad immediately after arrived home from a trip to Japan.
Spaghetti Bolognese (with Minced Soy Meat)
Although I was not at all fond of meat in my early years (and I am of course a vegetarian today) I loved the tomato sauce which surrounded the meat balls my mother made in her "spaghetti and meat b
Spaghetti with Mushrooms
I love all mushrooms indiscriminately. I could happily eat mushrooms for breakfast, lunch and dinner.
Spaghetti ya Mboga (Spaghetti with Roasted Vegetables)
This recipe really surprised me I must say. I left the tomatoes simmering for a long time and that really made the flavours pop.
Thai Chicken and Noodles in Satay Sauce
My husband loves, loves, loves this recipe. It is one of his favourite meals.
Thai Laksa
I know that the recipe seems very, very complicated.
Thai Noodle Soup with Shrimp
This soup is so good and it is fairly quick if you can get your hands on some decent Thai green curry paste. The ones that are sold in health food stores are usually quite nice.
Trail Casserole with Couscous
The picture accompanying this recipe is taken in the Scottish Highlands were we once went on a hike. It was marvellous.
Tuna and Pasta in Tomato Sauce
I have often ordered Tuna pasta at Italian restaurants but had never considered making it at home. I always thought it was so complicated.
Tuna Steaks and Noodles with Ginger and Tamari Dressing
This is the perfect meal for those who are trying to eat healthy yet lightly.
Vegetable Lasagna with Minced Soy Meat
Please do not make this recipe if you have Italian in-laws...Although I absolutely love this lasagna and so does my husband, I am not sure it would be appreciated by those who are used to authentic
Wild Mushrooms and Noodles Trail Soup
Me and my husband are keen hikers. We love nothing more than packing our bags on a Friday evening, heading into the Icelandic wilderness.
