Rice / Barley Casseroles

There is something magical about the combination of pearl barley or brown rice, melted cheese and vegetables such as cheese and spinach. It just never goes wrong and you can serve it to dinner guests and then eat the leftovers for lunch the next day. I love being able to use the tired vegetables at the end of the week (and even leftover rice or barley) in casseroles. I often make a whole lot in one go and freeze to reheat later. It's the best 'fast' food ever!
