This is a collection of recipes that are especially well suited for special occasions such as Easter, Bank holidays, birthdays, weddings, graduations or any special occasion really whether a happy or sad one. In Iceland there is a whole bunch of young people graduating from colleges and universities (and youngsters being confirmed) at the same every year and I often get asked what I would serve on these occasions.

The key to serving healthy options on a table full of sugary, buttery cakes and sweets is to make your cake (or treats) look good. Decorate the cake plate with flowers or fresh fruit and I guarantee you that people will taste your offerings. It is a complete myth that people don't want healthy options because most of the time the healthiest cakes I find vanish the fastest. At least that is my experience. Of course these healthy cakes need to taste nice and they need to look nice. Otherwise people will look at that brown blob on the table, meant to be a carrot cake and they will refuse to taste it and rightfully so.

All the recipes I have collected in this category, I have used myself for parties and celebrations of every kind. I haven't seen anybody spit the food out, yet.
