Special Occasions

This is a collection of recipes that are especially well suited for special occasions such as Easter, Bank holidays, birthdays, weddings, graduations or any special occasion really whether a happy or sad one. In Iceland there is a whole bunch of young people graduating from colleges and universities (and youngsters being confirmed) at the same every year and I often get asked what I would serve on these occasions.

The key to serving healthy options on a table full of sugary, buttery cakes and sweets is to make your cake (or treats) look good. Decorate the cake plate with flowers or fresh fruit and I guarantee you that people will taste your offerings. It is a complete myth that people don't want healthy options because most of the time the healthiest cakes I find vanish the fastest. At least that is my experience. Of course these healthy cakes need to taste nice and they need to look nice. Otherwise people will look at that brown blob on the table, meant to be a carrot cake and they will refuse to taste it and rightfully so.

All the recipes I have collected in this category, I have used myself for parties and celebrations of every kind. I haven't seen anybody spit the food out, yet.

A delicious and healthy cake, perfect for the birthday party

Nut and Chocolate Cake

This is one of my favourite cakes as it is very easy to make and is always a crowd pleaser. Which is why I almost always make this cake for my birthday or special occasions.

You don't need to be married to enjoy the bliss of this healthy cake

Oatmeal and Jam Cake (Wedded Bliss Cake)

This cake is called Hjónabandssæla (Wedded Bliss Cake) in Iceland and is very popular in most households. It is similar to the Austrian Linzertorte.

Often filled with whipped cream and jam and served as "Cream Pancakes" in Icelan

Pancakes

Traditionally in Iceland, whenever there is a birthday party, a funeral, a graduation or any other social gathering, Icelandic women (and nowadays men as well) make pancakes and they make a lot as usually there is a huge stack which vanishes at lightning speed.

This pie is always a crowd pleasure. It never fails to satisfy!

Pecan Pie with Chocolate and Cashew Filling

This pie is absolutely delicious. I have served it on million occasions and it never fails to satisfy, even the most difficult chocolate lovers.

Sweet and delicious treats

Pistachio and Coconut Treats

I have often seriously considered using a pad lock on my containers because when you make something so nice as these delicious treats, it's very, very hard to keep your fingers away.

This drink reminds me so much of a very hot and sweaty day in Uganda

Refreshing Pineapple and Coconut Drink from Uganda

It was a baking hot day in a town called Jinja, Uganda.

A delightful soup, perfect for mid week

Thai Noodle Soup with Shrimp

This soup is so good and it is fairly quick if you can get your hands on some decent Thai green curry paste. The ones that are sold in health food stores are usually quite nice.

Mild and nice little nut loafs

Tomato Mini Nut Loafs

These are lovely little loafs/patties which are perfect on your Christmas table if you are a vegetarian. They also look quite festive if you team them with a nice, green salad.

Wonderful homemade wraps for sweet and savoury fillings

Tortilla Wraps

I never buy those tortilla wraps you find in supermarkets. Have you read the nutrient file on those with the big brand names?

A very popular and healthy salad, packed with protein and low in fat

Tuna Salad

When preparing my husband's lunch I am always trying to maintain a balance of complex carbohydrates, protein and healthy fats.

One very healthy mousse!

The Swedish version although no Icelandic person would admit it!

Waffles

I used to think that making waffles was an Icelandic tradition...I grew up watching my mom and grandmother make waffles on so many occasions.

My favourite lunch and light dinner

Wraps with Spinach and Hummus

In my view wraps are the perfect lunch and the perfect light meal, they always go well down with dinner guests and each and every time I serve them I get asked for the recipe.

Such a lovely soup and reminds me so much of Zanzibar

Zanzibar Carrot and Coconut Soup

This soup reminds me a lot of a soup I had at the Archipelago restaurant, Zanzibar in September 2007.
