Celery, Beet and Carrot Juice

If you are not into healthy eating, this drink probably might be a source of nightmares...it contains everything that "normal" people hate such as celery and beets (just add Brussel sprouts to complete the horror!!!). As you might have guessed I am very much into healthy eating and I love this juice. Beets (beetroots) are packed with iron, folic acid and antioxidants and the carrots contain vitamin A (Beta Carotene) and B1, B3, B6, folic acid and potassium. The celery aids the absorption of iron since it contains vitamin C (and K). It also contains the compound phalides which is supposed to lower the bad cholesterol and fight against certain types of cancer. This drink contains so much iron that if Dracula had been a vegetarian, he probably would have ordered this juice in a juice bar!!!

You will need a juicer to make this juice.


A healthy and not too sweet drink, one of my favourite juices

This recipe is:

  • Egg free
  • Gluten free
  • Lactose (dairy) free
  • Nut free
  • Vegan

Celery, Beet and Carrot Juice

Serves 2 people

Ingredients

  • 1 small piece ginger (equal to a grape in size), optional
  • 2 carrots
  • 1 beet
  • 1 celery stalk
  • 1 apple
  • 1 tablespoon lime juice

Preparation

  1. Wash and trim the beet, celery stalk and apple and cut into large chunks so that they fit through the juicer's chute.
  2. Wash the 2 carrots and peel (if preferred).
  3. Place the beet, carrots and 1 gram ginger in the juicer, followed by the 2 apples and celery stalk.
  4. Pour the liquid into a container along with the 1 tablespoon lime juice and stir well.
  5. Serve immediately with a couple of ice cubes.

Tips

  • If you don't like ginger you can leave it out.
