Frozen Bananas with a Chocolate Dip

Bananas are an excellent fruit and even come in their own packaging! If you have very ripe bananas which you have no idea what to do with, make these frozen treats, they are exquisite and dipped in chocolate and maybe some chopped hazelnuts or desiccated coconut, absolute heaven. I love serving these on a "warm" summer night (which usually doesn't happen in Iceland but we might wrap up in a blanket underneath a gas heater and pretend it's actually warm). You can freeze these to enjoy at any time, just remember to let them sit at room temperature for approximately 10 minutes before enjoying.

It's easy making these treats lactose free and vegan (just use your preferred chocolate).

Frozen Bananas with a Chocolate Dip

Serves 2-3

Ingredients

  • 3 bananas, ripe but not over ripe
  • 100 grams dark, organic chocolate (with raw cane sugar)
  • Dip of your choice (dessicated coconut, chopped nuts, almonds, dried fruit and more)

Preparation

  1. Peel the 3 bananas and wrap each one in cling film.
  2. Freeze the bananas for one hour (no longer, as you should be able to cut it in large pieces).
  3. Next you need to melt the chocolate. Note: before you start, your bowls, spatula, knife and chopping board should be completely dry.
  4. Chop the 100 grams chocolate into uniform pieces to ensure even melting. Place a metal or glass bowl that fits snugly over the top of a small saucepan. Be careful to avoid ALL contact with water (even a few drops will ruin the chocolate completely).
  5. Fill the small saucepan with water, just enough to provide heat but not so much that the bottom of the bowl touches the water. Heat the water over low heat until it begins to simmer, then turn the heat off and place the chocolate bowl over the water. Let the chocolate begin to melt, and then stir it gently with a dry spoon. When almost all of the chocolate is melted, lift the bowl from the saucepan and place on the table. Stir continuously until it is smooth, and completely melted.
  6. Cut each banana into 5-7 pieces.
  7. Place the melted chocolate and dips of your choice within easy reach.
  8. Dip each banana piece in the melted chocolate and dip immediately in your preferred dip.
  9. Place the banana on a serving dish.
  10. Repeat with the remaining banana pieces.
  11. Serve immediately or freeze to enjoy later.

Tips

  • You can use carob instead of the chocolate.
  • You can use milk chocolate or even white chocolate if you prefer.
