Peanut Butter Cookies

This must surely be the recipe with the shortest ingredients list ever, only three items! These cookies are very simple to prepare and are moorish and delicious. Note that you can add ground cinnamon or ground ginger or even coarse peanut butter for variation. These are also the perfect cookies for kids to make (if they are not allergic to peanuts). The cookies are lactose free and gluten free.

Peanut Butter Cookies

Makes 30 cookies

Ingredients

  • 130 grams (4½ oz) Rapadura (or other raw cane sugar)
  • 125 millilitres (4¼ oz) smooth peanut butter (home made or organic, without added sugar)
  • 1 egg (please use free range eggs)

Preparation

  1. In a medium bowl, combine the 125 millilitres smooth peanut butter, 130 grams raw cane sugar and one egg. Beat together with a fork until smooth.
  2. Place baking parchment on a baking tray.
  3. Kneed the dough lightly and form small balls with your hands. Place on the baking parchment and press down with a fork (to even out any bumps and make a nice indentation in the cookies).
  4. Bake at 200 degrees Celsius/400 Fahrenheit/Gas Mark 6, for 10-12 minutes.
  5. Cool on a wire rack.

Tips

  •  The cookies will be very soft just as they come out of the oven, however they will get crunchy once they cool.
  • For added texture, replace half of the smooth peanut butter with crunchy peanut butter or even chopped peanuts.
