Sweet Potato Morning Juice

This is a sweet and delicious juice which has one unusual ingredient, sweet potato. Don't be afraid to use it though, you won't detect any potato taste. The juice is packed with vitamin C and A (Beta Carotene) which can help fight against macular degeneration. The juice is also packed with antioxidants and is very delicious. This one will definitely give you the recommended daily amount of vitamin C!

Sweet Potato Morning Juice
Serves 2 people
Ingredients
- 125 millilitres (4 fluid oz) orange juice (or 1-2 oranges, squeezed)
- 1 carrot
- 1 sweet potato (capsicum)
- 1 apple (sweet)
Preparation
- Peel the sweet potato and chop coarsely so that it fits in the juicer's chute.
- Slice the apples so that it fits in the juicer's shoot.
- Peel the carrot.
- Run the sweet potato, carrot and apple through the juicer. Pour juice into a container.
- Add the 125 millilitres orange juice and stir well.
- Serve immediately.
- Serve with ice cubes if preferred.
Tips
- You can add half a pear to this recipe for a nice variation.
- You can use any apple you prefer, just make sure it is sweet.
