Apple and Tamari Dressing

This is a lovely, fat free salad dressing which can also be served with nut patties, burgers, grilled vegetables and more. I find it best to create the dressing the day before serving to allow the taste to develop but this is not necessary.
A lovely and simple dressing for every salad
This recipe is:
- Egg free
- Gluten free
- Lactose (dairy) free
- Nut free
- Vegan
Apple and Tamari Dressing
Makes 200 millilitres
Ingredients
- A small piece fresh ginger (similar to a grape in size), grated
- 150 millilitres (5¼ fluid oz) apple juice
- 50 millilitres (1½ fluid oz) tamari sauce
- 1 teaspoon ground paprika
- ½ teaspoon agave nectar
- ½ teaspoon lemon juice
Preparation
- Peel the small piece ginger (the skin is very thin, you can scrape it off with a teaspoon or a small knife). Grate the ginger finely above a small bowl so that the juice drips into it.
- Add to the bowl the following ingredients: 50 millilitres tamari sauce, 150 millilitres apple juice, ½ teaspoon agave nectar, ½ teaspoon lemon juice and 1 teaspoon ground paprika.
- Allow to rest in the bowl for at least 30 minutes before serving (to allow the flavours to develop).
Tips
- Serve with salads, veggie burgers and patties, grilled food, wraps and more.
- You can use soy sauce instead of the tamari sauce if you prefer (note that the soy sauce usually includes gluten).
