Banana and Coconut Smoothie

This is a very filling, yet tasty smoothie which has a strong coconut taste. You can dilute the coconut taste if you prefer, by using half soy milk and half coconut milk. I love to have this smoothie when I come home late from work and want something satisfying and a little sweet. It is especially nice when I am not bothered about making dinner.
This drink is vegan, lactose free and nut free but does of course include coconuts.
Note that you will need a blender (or a food processor) to make this smoothie.
A decadent and filling banana and coconut smoothie
This recipe is:

Banana and Coconut Smoothie
Serves 2 people
Ingredients
- 300 millilitres (10 fluid oz) coconut milk, chilled
- 100 millilitres (3½ fluid oz) coconut water, chilled
- 50 millilitres (1½ fluid oz) orange juice
- 2 large bananas, very ripe
- 1 tablespoon desiccated coconut (optional)
- 1 tablespoon agave nectar (optional)
- A couple of ice cubes
Preparation
- Place the ice cubes in the blender or food processor.
- Pour the 50 millilitres orange juice on top of the ice cubes.
- Blend for 5 seconds.
- Peel the 2 bananas and add to the blender along with the 300 millilitres coconut milk and 100 millilitres coconut water.
- Add the 1 tablespoon agave nectar if you prefer a sweeter smoothie.
- Blend for 15 seconds or until smooth.
- Serve immediately and sprinkle 1 tablespoon desiccated coconut on top.
Tips
- You can use maple syrup instead of the agave nectar.
- For a delicious milk shake, freeze the smoothie for 2-3 hours and then pop in the blender along with a little extra coconut water or coconut milk.
