A loaf of bread for me means ultimate comfort. To make the bread, take it warm out of the oven, slice it, serve it and then see people's smiles and listen to the uhms and the ahhs. It's fantastic. Although I often make bread rolls (buns) instead of loaves since they are speedier to make, I still absolutely love loaves of bread. Just make sure you don't use too much liquid as the bread will become too heavy and even poorly heated in the middle. Always start with less liquid than the recipe states and then add some more if needed. The dough should be sticky but dry-ish, not runny and should not run off a wooden spoon.

Note that these breads are very quick to prepare as there is no need for all the kneading and waiting and heaving you find with breads that contain yeast.

This bread is the perfect one to make if you have fresh herbs that are past their best. I used soy meal as I like the texture of it, however you can use more spelt flour instead.

Sunflower- and sesame seeds are such a wonderful and healthy duo. They fit in almost every bread recipe (unless you are allergic of course).

I made this bread once when I had leftover sweet potatoes. Since then I always try to have some leftover sweet potatoes when cooking them. I love their slightly sweet taste in the bread.
