Pasta / Noodles with Vegetables
A vegetable and pasta casserole must be one of the cheapest yet easiest recipes to make and still it can feed so many because it is filling. I always use spelt pasta in my recipes but you can use wholewheat or wheat pasta if you prefer. You can also use buckwheat pasta or other gluten free pasta if you are intolerant to gluten. It is usually no problem freezing vegetable pasta and casseroles and the pasta doesn't become too soggy I find.

Please do not make this recipe if you have Italian in-laws...Although I absolutely love this lasagna and so does my husband, I am not sure it would be appreciated by those who are used to authentic
