My Sister in Law's Apple Pie

My sister in law gave me this recipe although I am not sure where it is from originally. I replaced the white sugar with raw cane sugar and agave nectar and I used coconut oil instead of the butter. I also used spelt instead of the white flour. Finally I added chopped nuts on top. My mother in law went bananas when I did. Not because she got angry, but because she liked it so much and I must admit that chopped nuts on top of an apple pie is not a bad idea.

Note that you will need a round, heat proof baking dish, 24 centimetres (9.4 inches) in diameter.

My Sister in Law's Apple Pie

Makes one large pie

Ingredients

Filling:

  • 550 grams (19¼ oz) sweet apples, cored and chopped finely
  • 2 tablespoons spelt flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt (Himalaya or sea salt)
  • 40 grams (1½ oz) rapadura cane sugar (or any other cane sugar)
  • 2 tablespoons maple syrup or agave nectar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (from a health food store)
  • 2 tablespoons coconut oil


Dough:

  • 2 small eggs (please use free range eggs), lightly beaten with a fork
  • 60 grams (2 oz) spelt flour
  • ½ teaspoon gluten free and aluminium free baking powder
  • 40 grams (1½ oz) rapadura cane sugar (or any other cane sugar)
  • 2 tablespoons maple syrup or agave nectar
  • 2 tablespoons coconut oil
  • 1 tablespoon orange- or apple juice

Preparation

Start with the filling:

  1. Core the 550 grams apples and chop into small cubes (smaller than sugar cubes).
  2. In a large bowl sift together 2 tablespoons spelt flour, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg and 1/4 teaspoon salt. Stir well.
  3. In a smaller bowl combine the 40 grams rapadura cane sugar, 2 tablespoons maple syrup or agave nectar, 1 tablespoon lemon juice, 1 teaspoon vanilla extract and 2 tablespoons coconut oil. Stir well and pour into the large bowl. Add the apple cubes into the large bowl and stir well.
  4. Pour the mixture into the heat proof baking dish. It might not seem like much but you should spread it as much as you can in a thin layer using a fork or a large spoon.

Now prepare the dough:

  1. Beat the two eggs lightly with a fork.
  2. In a large bowl sift together 60 grams spelt flour and 1/2 teaspoon baking powder. Stir well.
  3. In another bowl combine 40 grams rapadura cane sugar, 2 tablespoons maple syrup or agave nectar, 2 tablespoons coconut oil, 1 tablespoon orange- or apple juice and the eggs. Stir well.
  4. Pour the mixture into the large bowl and stir well. The mixture should be fairly moist and it should come off the spoon quite easily in large clumps.
  5. Spread the mixture on top of the apples as evenly as possible. It will not cover the whole surface but don't worry as the mixture will spread during baking.
  6. Bake at 180 degrees Celsius/350 Fahrenheit/Gas Mark 4, for 25-30 minutes.

Tips

  • You can serve cashew cream or regular, whipped cream. I also really like serving vanilla ice cream with the apple pie, it's always a big hit.
  • You can add 50 grams chopped nuts on top of the pie, it is really delicious. I use walnuts, pecans or hazelnuts.
