Walnut and Raisin Cookies / Treats

Walnuts are amazingly healthy and are sometimes called the "heart's seat belt" because of their heart protective qualities. They are also good for our brain. They contain omega-3 fatty acids, vitamin E, vitamin B, fibre and protein. They are also considered to reduce the bad cholesterol in our blood. If you prefer to omit the cocoa powder you can use desiccated coconut and a pinch of cinnamon instead. I often make these cookies before Christmas and I usually create both versions.

You will need a food processor to make these cookies.

Walnut and Raisin Cookies / Treats

Makes 15-20 cookies

Ingredients

  • 60 grams (2 oz) raisins
  • 40 grams(1½ ox)  walnuts
  • 30 grams (1 oz) cocoa powder
  • 1 tablespoon cacao nibs
  • 1 teaspoon agave nectar

Preparation

  1. Place 60 grams raisins and 40 grams walnuts in a food processor. Blend for 20 seconds or until well combined.
  2. Add the 1 tablespoon cacao nibs, 1 teaspoon agave nectar and 30 grams cocoa powder. Blend for 10 seconds.
  3. Scrape the sides of the bowl and continue blending for a couple of seconds until everything is well combined. If the mixture is too dry (difficult to pinch together), add 1 teaspoon agave nectar and blend for a few seconds.
  4. Knead the mixture with your hands until smooth. Place in the fridge for 20 minutes.
  5. Place baking parchment on a table surface and roll out the mixture (0.8 centimetres/0.3 inches thick) either with a rolling pin or a large bottle. You can also use the palms of your hands.
  6. Use cookie cutters (or a small glass tumbler with sharp edges) to cut out figures or circles.
  7. Decorate with desiccated coconut or chopped nuts.

Tips

  • You can use pecan nuts instead of walnuts.
  • You can omit the cocoa powder and the cacao nibs and use desiccated coconut and cinnamon instead.
  • You can use carob instead of the cocoa powder.
  • You can use dates instead of raisins.
  • You can use maple syrup instead of agave nectar.
