Ice Cream
I would rather eat Styrofoam than the standard ice cream from the supermarket. When reading the ingredients list and the nutrient description I get dizzy because ice cream often contains so much rubbish. It can contain all kinds of synthetic ingredients because to most people the fluffiness of the ice cream is more important than the fact that the stuff that makes the ice cream fluffy can slowly clog up your veins and cause health problems.
I am very fond of ice creams, in fact I love ice creams and so does my husband. He even states that he has a special compartment in his stomach especially made just for ice cream and no matter how full he is, there is always room in the compartment. I however only eat my own ice cream (or any ice cream that is similar to mine) since I never use cream, butter, egg yolks or white sugar. I often use milk (soy milk, rice milk, oat milk/oat cream or almond milk) although I have in recent years started experimenting with nuts as a base for ice creams, with good results. I also use avocados quite a lot as they are perfect for ice cream making. It's not often you can say of ice creams that they are healthy for your heart and brain, packed with protein, vitamins, minerals and fibre. However, I am proud of the fact that this description would fit all of my ice creams perfectly.
Berry and Rhubarb Ice Lollies
These lollies are as colourful as they are healthy. They are layered and I always like layered colours in food because it is fun to look at and gives you a mini selection of different tastes.
Blueberry and Banana Ice Cream
Yum..I absolutely love this ice cream. When I first made it I made a large batch and put the leftover into the freezer and then completely forgot about it.
Blueberry and Chocolate Ice Cream
Blueberries and chocolate are a fairly unusual combination, at least in an ice cream.
Blueberry Ice Cream Cake
I often make treats from blueberries in the autumn since the only berries we get in Iceland are blueberries and bilberries (and redcurrants).
Cashew and Banana Ice Cream
How often can you eat ice cream without worrying about clogging your veins?
Cashew and Mango Ice Cream Drops
This is a delicious treat. I love the look on my guests' faces when I serve them frozen treats. They never expect it (but are very delighted when they try it out).
Chocolate and Date Ice Cream
This ice cream is one of the first ones I made during my days when I thought the only ice creams available were the ones bought from the shops, packed with rubbish.
Chocolate Chip Ice Cream
I don't like ice creams that contain lots of cream, egg yolks or egg whites and are so fatty that when the ice cream melts in your mouth, it leaves a fatty layer inside it.
Chocolate Mint Ice Cream
My husband said to me after scooping a spoonful (or ten) of ice cream into his mouth..."wow, this tastes exactly like After Eight" (the chocolate mints).
Frozen Bananas with a Chocolate Dip
Bananas are an excellent fruit and even come in their own packaging!
Frozen Fruit and Nut Cake
This is quite an unusual cake but delightful none the less and very healthy.
Green, Green Ice Cream
I often serve this ice cream to dinner guests.
Mango and Cashew Ice Cream
This is a wonderful, wonderful ice cream and it is packed with protein, and healthy fats.
Mango and Coconut Ice Cream
This ice cream is a bit of tropical sunshine in a bowl. It doesn't contain any white sugar (only agave nectar) and is lactose (dairy) free, egg free and nut free.
Rhubarb and Strawberry Ice Cream
I love rhubarb, especially when teamed with strawberries. My friend Elva often gives me rhubarb and when she does I go rhubarb-crazy making everything with rhubarb.
Rhubarb and Strawberry Ice Lollies
These lollies are delicious. They don't contain any dairy products and are therefore perfect for those who are intolerant or allergic to dairy.
Rhubarb and Strawberry Milk Shake
I love, love, love this "milk" shake (which is actually not made with any dairy products). Forget the milk shakes you can buy in those fast food places because this is the real deal.
Strawberry and Banana Ice Lollies
I love ice lollies. When I was a little girl I used to live in Canada (from 3-7 years old) where of course there are warm summer days.
Vanilla Ice Cream
This is a low fat egg free, lactose free, gluten free and vegan vanilla ice cream. Sounds bad right?
Vanilla Milk Shake
I absolutely love to make this milk shake on a warm summer's day (which happens around once every summer in Iceland with a "heat wave" of 20 degrees Celsius/68 Fahrenheit..I know, pretty sad).
