Vegetable Casseroles
The best vegetable casseroles I have ever tasted were in Kenya. There are some cheap and cheerful places down town Nairobi which sell cheap vegetable casseroles. Those casseroles stew for a long, long time over low heat and because the ingredients are 100% natural and authentic they just taste phenomenal, sweet and succulent. I have also had great casseroles elsewhere in countries such as Rwanda, Tanzania and Uganda. Each country has its own unique flavour and distinct ingredients although the stables are always beans of some sort, tomatoes, onions and other vegetables. Sometimes ground nuts are also used. Although casseroles are not regarded as the most fancy of foods it is still my absolute favourite. They are always served with rice, a slice of lemon and chapati bread. Filling, comforting and homely, an absolute devine combination.
Dhal (Lentil Soup) with Pumpkin and Coconut Milk
I actually had to bake this soup in an oven proof baking dishes since the gas on my stove finished, just in the middle of my cooking!
