I often serve snacks or starters before a main course. I like salads and bruschetta as they are light and go well with almost anything. I don't like heavy starters as if I eat them I won't have any room for the main course. This is the reason I often order starters for main course at restaurants, my stomach simply is very, very small. I don't know how many times I have ordered both a starter and a main course only to have my husband say to me: "You will NEVER eat both". In all fairness he is always, always right!
Baked Salmon Skin
Yes really, baked salmon skin!!! You might think that I have gone absolutely mad but bear with me here. I can promise you that once you taste this, you won't ever throw out salmon skin again.
Beet Salad with Parmesan and Rocket Leaves
This is the perfect late summer salad. It has vibrant colours and a slightly sweet taste with a peppery kick. I adore beets (beetroots), especially baked as it brings out their subtle sweetness.
