Soups and noodles are a good marriage as noodles can make a light soup go a long, long way. I usually prefer buckwheat noodles in my soups because they are fairly strong (don't come soft too easily) and are light on the tummy. I often use rice noodles as well. I don't like soggy noodles at all which is why I never freeze noodle soups (unless freezing the base first and adding the noodles when reheated). I would never buy noodles in a plastic pot (so popular with students) but when I was younger it used to be my main diet. I shiver when thinking about it because I was constantly ill with colds and flu like symptoms and constantly had a stomach cramp. I blame the noodle soups and if I had known then what I know now, that noodle soups are so, so easy to make I would have made my own, without a doubt.
