I am not particularly fond of noodles as they make me feel too full even after the tiniest portion. I do however like rice noodles in soups because they are gluten free and a bit lighter than noodles made from spelt. I also like buckwheat noodles as they are fairly light on the stomach as well. I do like noodle soups as the base is mainly liquid and therefore light. The noodles make the soups a bit more substantial and are perfect to make a light meal work for a crowd.
