Seafood Soups
My mother in law makes THE best lobster soup in the world (note to self: get recipe from mum in law). I am actually very fond of seafood soups as they are often light yet tasty. I don't like a strong, fishy smell but instead the soup should have a pleasant ocean aroma, it should remind you of walks by the sea, of sand and of sea shells. It should not remind you of actual fish! We are lucky in Iceland having an abundance of fresh catch from the sea each day although if you are not able to source your fish from a fish monger you can always use frozen fish instead.
A Simple Fish Soup
This soup is both very simple to make and cheap and perfect mid week, especially when you have a bit of cooked leftover fish in the fridge.

This soup is the perfect one to make if you have a bit of leftover salmon in the freezer or fridge.

I am not particularly fond of lobster or shrimp although I might eat it a couple of times a year. My husband however loves both.
